Hi, it’s Keri from One Mama’s Daily Drama. I live in Texas, so it’s hard to get too far into summer without something frozen. I made these chocolate fudge ice pops for my kids, but really, they are as much for me as them.

I have a bit of a sweet tooth and these satisfy that with a single serving. Still, it’s probably a good thing that my ice pop mold only makes four at a time. I could easily have one of these every day until September.

These ice pops are rich and creamy. They also have a secret ingredient that makes them a little spicy and earthy.

I don’t know whether it’s popular everywhere, but down here we also have Mexican hot chocolate in the winter. It is hot chocolate with cinnamon, which really warms you up. These ice pops taste a lot like that yummy drink.

I mixed this recipe by hand with a tiny whisk. If you use a mixer, just make sure you don’t whip the cream! Pouring the mix into the molds is really easy if you use a large measuring cup instead of a mixing bowl.

Chocolate fudge ice pops

Ingredients

  • 1 pint heavy cream
  • 3 tablespoons brown sugar
  • 2 teaspoons cocoa powder
  • 1 teaspoon cinnamon

Instructions

  • Pour the cream into a bowl or a large measuring cup. Add the other ingredients and whisk until combined.
  • Pour into ice pop molds and free until solid.

The secret ingredient in this chocolate fudge ice pop recipe is cinnamon and I think it makes them really flavorful. If you are not a fan, you can leave it out or add a few drops of vanilla extract.
