Caprese Salad

I love Caprese. Caprese appetizers, soups, sandwiches, salads….anything. It’s just such a FRESH and crisp flavor! I’ve been trying to eat healthier lately, so I’m trying to have a salad for (or with) lunch every day. To stick to this, I have to make sure my salad’s are fun, delicious and QUICK. One of my favs is this Caprese Salad, and it’s definitely easy to make, yet full of flavor! With or without the balsamic drizzle, it’s a winner!
Caprese Salad / Busy Mom's Helper
See, it’s just so PRETTY!!!
Ingredients
2 cups fresh Greens (spinach is good, or basil leaves)
1/2 cup Cherry Tomatoes, sliced (I do in half)
1/2 cup Mozzarella cubes
1 tsp. Basil
Balsamic Vinegar
Olive Oil
Directions
Chop the greens of your choice (don’t you hate trying to eat a salad with huge leaves? I do!).
Toss in the sliced tomatoes and mozzarella cubes.
Sprinkle with a bit of basil, then drizzle with a combo of balsamic vinegar and olive oil. I usually mix my balsamic and oil together THEN drizzle, but it works either way.
Enjoy your tasty and healthy salad!
Note: I try to find a nice, soft Mozzarella, as it tends to taste the best with this.

  • Danielle, this salad just looks like summer to me… and oh, how I miss summer right now! This snow needs to just go away! We got another 2-3 inches last night on top of the 10 or so we already had. 😛 Pinned and sharing! 🙂

    • Totally, Carrie! This is our first full winter in Texas (moved from up North) and I’m just dying in this cold! We didn’t get tons of snow, mostly ice….yuck! Hopefully summer gets here soon, or I may consider moving again LOL

    • Good question, Tammy! Actually, it’s all dependent on YOU. I prefer more balsamic than oil, but Hubby prefers equal parts. So it just depends on how strong of a balsamic vinegar taste you want 😀 Sorry that’s not very exact!
