It’s fall and you know what that means? Yes pumpkin everything!  I love pumpkin but not till recently had I ever tried making bread and especially never thought to make pumpkin bread with cream cheese. I now have a new favorite pumpkin recipe of Cream Cheese Pumpkin Bread that is a complete melt in your mouth fall favorite recipe that makes a perfect dessert or even a nice breakfast.

Cream Cheese Pumpkin Bread is incredible bread that will be perfect for any dinner, dessert, or even a quick grab and go breakfast, and it is pretty simple to make.  With the recipe it only makes one loaf but I hate putting a partial can of pumpkin in the fridge, well I bought the big can that was 29 ounces, anyways so I ended up tripling the recipe, made three loafs but kept the bread mix in three separate bowls so it was easy to split into the bread pans. If you are good at measuring things out you can triple it in one bowl, make just a single loaf, whatever fits your needs.

Bread – Ingredients

  • 1 egg
  • 1 cup pumpkin puree
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • ¼ cup coconut oil, melted
  • ¼ cup sour cream
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground nutmeg
  • 1 cup flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda

Cream Cheese Filling – Ingredients

  • 1 egg
  • 4 ounces softened cream cheese
  • ¼ cup granulated sugar
  • 3 tablespoons flour

Directions

  1. Preheat oven to 350. Spray a  bread loaf pan with non-stick spray and then dust it with flour, the flour makes it a lot easier to get the bread out of the pan.
  2. For the bread, mix the first 10 ingredients well in a large bowl.
  3. Add in the flour, baking powder, and baking soda, gently stir in just until combined; don’t overmix.
  4. Pour about 2/3 of the batter into the prepared pan spreading it smooth and pushing it into the corners. Set aside.
  5. For the cream cheese filling put all ingredients into a mixer and cream until nice and fluffy, usually about five minutes.
  6. Evenly pour the cream cheese filling mixture over the bread, be careful not to push the filling into the pumpkin mixture but getting it to all the edges.
  7. Top the cream cheese layer with the remaining pumpkin batter, smoothing the top without pushing it into the cream cheese layer and again still covering the cream cheese getting the pumpkin mix to all edges.
  8. Bake for about 50 minutes or until the bread slightly starts to pull away from the edges.
  9. Allow the bread to slightly cool in the pan, then gently run a spatula along the edges and turn over onto a wire rack to finish cooling. Enjoy!

Ingredients

  • 1 package Hillshire Farm smoked sausage, diced
  • 1 large bag frozen Breakfast Potatoes (shredded or diced)
  • 2 Green Bell Peppers, diced
  • 1 1/2 cups Tomatoes, diced
  • 1/2 Red Onion, diced
  • 2 cups Cheddar Cheese, shredded
  • 6 Eggs, large
  • 1/4 cup Olive Oil
  • Seasoning Mix:
    • 2 tbsp. Paprika
    • 2 tbsp. Onion Powder
    • 1/4-1/2 cup Brown Sugar, packed
    • 1 tbsp. Garlic Powder
    • 1 tsp. Chili Powder
    • 1 tsp. Salt
    • 1 tsp. Black Pepper

Directions

  1. Mix the seasoning mix ingredients together well.
  2. Heat the olive oil in a large skillet or wok over medium heat. Add the breakfast potatoes and seasoning mix, stirring to coat evenly with the seasonings and oil. Cook about 3-5 minutes or until potato pieces are evenly coated and starting to soften. Turn heat to medium-low.
  3. In a small bowl, scramble the eggs, then pour over potatoes and mix in. When the eggs are starting to cook, add in the Hillshire Farms smoked sausage, bell peppers, tomatoes and onion. Continue cooking over low heat, stirring frequently, until everything is heated through. Top with cheese and heat just long enough to melt the cheese.
  4. Serve warm.

Strawberry Almond Overnight Oats

Summer is in full swing! This means for most, kids are out of school and schedules change into a different mode.  Mornings can be a little chaotic in the kitchen with all four of my kids trying to get their breakfast. Of course, they’re ravenous (always) because they haven’t eaten in 12 hours, so ya know, it’s all about them getting food.  That’s why I love these Strawberry Almond Overnight Oats!

It’s the perfect grab ‘n go breakfast, even if you’re eating at home!  The oats are prepped the night before, so all they have to do is grab a jar and a spoon and enjoy!  Everyone in our family loves these.  If you are headed off to work in the morning, it’s perfect to take with you as your breakfast or even a fabulous nutritional mid-morning snack that will keep you energized.

I live in a 4 season climate.  Summer, specifically June is peak time for strawberries.  There is just nothing like farm fresh, straight from the bush, strawberries (and blueberries, cherries, etc).  That is why I chose Strawberry Almond Overnight Oats, but, these are so versatile that the flavor combinations are endless!

The basic recipe is simple:

1/4 cup old fashioned rolled oats

1/4 cup plain non fat yogurt

1 teaspoon Truvia

1 1/2 teaspoons chia seeds

1/4 cup almond milk

 After this, you add your fruit and flavorings. For this recipe, I added a 1/4 tsp almond extract and sliced strawberries.

Cover it again, shake it up and let it set in the fridge to do it’s magic!  I typically add a little more fresh fruit to top it off in the morning, but totally not necessary if you don’t want the hassle.

So this recipe, really doesn’t take much time at all to make. I’ve given you the measurements for 1 pint sized jar.  I just line up the how many jars I need and add the ingredients to each.  The kids love making these too.  Sometimes in the afternoon, we’ll make them together, for the next day.

Notes~

  • Truvia is my sweetener of choice to make it friendly for the whole family.  Some of us can’t have sugar.  You can also use honey, or use vanilla yogurt instead of plain and skip the sweetener all together.
  • Regular milk works just as good as any nut milk, so don’t let that ingredient keep you from trying it.
  • Always shake it before adding your fruit, it will blend together much easier.  Give it another shake after adding the fruit, or just stir.

Strawberry Almond Overnight Oats

Ingredients

  • 1/4 cup old fashioned rolled oats
  • 1/4 cup plain non-fat Greek yogurt
  • 1 tsp Truvia or honey or other sweetener
  • 1 1/2 tsp chial seeds
  • 1/4 cup almond milk or regular milk
  • 1/4 tsp almond extract
  • 2-3 Tbs fresh sliced strawberries you need enough to fill the jar

Instructions

  • Place the oats, yogurt, sweetener, chia seeds, almond extract, and milk in a pint size mason jar.
  • Cover and shake vigorously until ingredients are well combined.
  • Add fruit, cover and shake again to mix it in.
  • Place in the refrigerator overnight. In the morning, the mixture will be thick.
  • Enjoy!

I wanted to switch things up a bit from the Multigrain Chocolate Doughnuts I shared before, and decided that summer called for something ‘bright and fresh’. What’s one flavor that goes perfectly with that? Strawberry lemonade, of course – so I decided to give it a try. The result was not only fresh in flavor, but a wonderful pick-me-up type taste. So delicious – and still as easy to make as ever using Nestle Gerber Lil’ Bits Oatmeal Banana Strawberry Cereal from Walmart.

Ingredients

  • 1 1/3 cup All-purpose Flour
  • 1 cup Nestle Gerber Lil’ Bits Oatmeal Banana Strawberry Cereal
  • 1 1/2 tsp. Baking Powder
  • 1/4 tsp. Baking Soda
  • 3/4 tsp. Salt
  • 3/4 cup Sugar
  • 1/4 cup Butter, melted
  • 1/4 cup Vegetable Oil
  • 3 tsp. Vanilla Extract
  • 2 Large Eggs
  • 1 cup Milk
  • 2 tbsp. Lemon Juice

  1. Preheat oven to 350 Degrees F. Spray two doughnut pans, set aside.
  2. Mix all the ingredients together until well-combined. Pour into the prepared doughnut pan.
  3. Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted comes out clean.

Strawberry Lemonade Glaze

  • 1/2 cup Powdered Sugar
  • 1 tbsp. Butter, melted
  • 1/2 tsp. Vanilla Extract
  • Dash Salt
  • 1/2-2 tbsp. Milk
  • 1 tbsp. Lemon Juice
  • 1-2 drops Red Food Coloring, if desired

Whisk all ingredients until smooth and creamy – drizzle over doughnuts.

I still can’t believe how much strawberry flavor comes in that Gerber Cereal – it makes these doughnuts PERFECT! The texture is soft and moist, and once the drizzle sets it’s like a perfect balance. I think I do prefer the Multigrain Chocolate Doughnuts best – but it’s chocolate so OF COURSE! These strawberry lemonade doughnuts are a very close second, though, and go just great with a nice summer morning.

Okay, so I had a REALLY hard time deciding what the proper spelling was – chocolate DOUGHNUT or chocolate DONUT. I finally decided to just go with the classic, because it looks a bit more ‘fancy’. I’ve honestly never made doughnuts before, because it was kind of intimidating – then I realized I could do a BAKED recipe instead of dealing with the frying part. Woot woot! I love how cake-like and moist these babies are – with a lick-your-fingers good frosting drizzled for a nice finish. I may have eaten one too many – okay, a FEW too many – but it was so worth it! AND since it’s made with Nestle Gerber Multigrain Cereal from Walmart, it’s more on the healthy side. That’s a win to me!

Ingredients

  • 1/4 cup + 2 tbsp. All-purpose Flour
  • 1/2 cup Nestle Gerber Multigrain Cereal
  • 3 tbsp. Cocoa Powder
  • 1/2 tsp. Baking Powder
  • 1/4 tsp. Baking Soda
  • 1/2 cup Light Brown Sugar
  • 1/4 tsp. Salt
  • 1 Large Egg
  • 3 tbsp. Butter, melted
  • 1/2 cup Milk
  • 1 tbsp. Vinegar
  • 1 tsp. Vanilla Extract
  • 1/4 cup + 1/8 cup Chocolate Chips, melted

Directions

  1. Preheat oven to 350 Degrees F. Spray a couple doughnut pans well, set aside.
  2. Mix all of the ingredients together until well-combined. Pour into the prepared doughnut pans.
  3. Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted comes out clean.

Chocolate Frosting

  • 1/2 cup Powdered Sugar
  • 1/8 cup Cocoa Powder
  • 1/4 tsp. Vanilla Extract
  • 1-3 tbsp. Milk

Whip all ingredients until smooth and creamy – the consistency should be thick but pourable. Drizzle over the doughnuts, then let set.

Homemade Popsicles

Ingredients – Peach Lemonade

  • Gerber Yogurt Blends Peach flavor (4 individual containers)
  • Gerber 2nd Foods Baby Food Peach flavor (2 individual containers)
  • 1/2 can Sparkling Lemon-flavored drink

Ingredients – Mixed Fruit

  • Gerber Yogurt Blends Strawberry Banana flavor (4 individual containers)
  • Gerber 2nd Foods Baby Food Apple flavor (2 individual containers)
  • Gerber 2nd Foods Baby Food Apple Strawberry Banana flavor (2 individual containers)
  • 1/2 – 1 can Sparkling drink

The directions are the same for both

Directions

  1. Mix all of the ingredients together.
  2. Carefully pour (or use a funnel) into your popsicle molds.
  3. Freeze then enjoy!

Simple Crepes for the Whole Family

Because school starts so early for our kids, morning tends to be pretty rushed, meaning breakfast isn’t always the most elaborate (not that many of my meals are, to keep it real). One of our favorites that we work into our menu as often as is practical is not only a really budget-friendly recipe, but also super delicious. You can whip up these Simple Crepes for the whole family for breakfast, snack or even a dessert!

This isn’t as much of an easy breakfast recipe as cereal, smoothies or even some of my oatmeal recipes I’ve shared – but once you whip up the batter really quick it’s just a matter of cooking and dishing up!

These crepes are one of the dishes that EVERYONE in the family loves, and asks for seconds. And thirds – and sometimes my kids will even eat five or six of them! Yup, definitely a winner in my books. We mix up the toppings and drizzles sometimes, but the overall favorite so far has been strawberries, whipped cream and chocolate syrup drizzled on top. Makes me think of my Chocolate Crepes with Strawberry Cream!

Note: We have 6 people in our family, who eat a LOT of these (like I said above, my kids sometimes eat 4-6 each) so we make a big batch. This recipe is what WE use to feed our family, and we often have about 6 large crepes leftover. If you have a smaller family, or they won’t eat as much, just divide the recipe as needed.

Simple Crepes Ingredients

  • 4 tbsp. Sugar
  • 8 tbsp. Coconut Oil, melted
  • 2 tbsp. Vanilla Extrat
  • Dash of Salt
  • 8 Eggs
  • 4 cups Milk
  • 2 cups Water
  • 4 cups All-purpose Flour
  • Toppings of Choice

Note: I use my blender to mix the batter, just breaking into thirds so it fits. You can use a mixer, too.

Directions

  1. Combine all of the ingredients in either your blender (divide into thirds or quarters so it fits – make sure to have even liquid/solid to get it well mixed) or a larger bowl or mixer. Blend/mix very well so it’s no longer lumpy
  2. Take a frying pan (we get 4 going at a time to be quicker, and it’s just different sizes), spray it with cooking spray, then heat up over medium-low heat. For large pans (like 10-14 inch) I do about 1/2-3/4 cup batter. More = thicker crepe, less = thinner crepe.
  3. When the edges are starting to come up and the crepe slides a bit when you shake the pan side to side, it’s time to flip it over. Don’t over cook!
  4. Spray your pan before each crepe, and continue through the batter. Serve warm with toppings of your choice!

With 4 pans going, it doesn’t take long to flip through these simple crepes – it’s just a matter of staying alert to make sure they don’t burn! Adjust the heat as necessary as the pan gets hotter, or if there’s a thinner crepe.

Single Serve Cranberry Baked Oatmeal Cups

These Single Serve Cranberry Baked Oatmeal cups are the perfect on the go breakfast!! Do you feel like your mornings are rushed? Is it a little cray cray at your house?  I know they are at my house! Not all the time, but we have certain mornings that are extra full.

We’ll here’s one tip to a smoother morning… Single Serve Cranberry Baked Oatmeal!  Sounds fancy, right?  You feel like your eating a weekend breakfast during the week! But, they are super easy to put together, they only bake for about 25 minutes.  Whip up a batch or two on the weekend and you’ll have these all week!

Have you had baked oatmeal?  I know some people sort of squirm at the sound of oatmeal.  They think it’s a bit boring, or plain.  I promise you this is not even close to boring!  It actually tastes like a delicious soft cookie!  Shh!  Don’t tell your kids it’s nutritious!  They’ll never know!

The best part?  Single serve!  Grab and go!  I don’t know what it is, but there is just something about individual servings.  My kids think they’re the bomb.

What you need~

  • rolled oats
  • brown sugar
  • cinnamon, baking powder, salt
  • dried cranberries
  • eggs
  • milk
  • butter
  • unsweetened applesauce
  • vanilla

What to do~

  • Combine oats, sugar, cinnamon, baking powder, and salt into a large bowl
  • Add cranberries and stir
  • In a separate bowl add eggs, milk, butter, applesauce and vanilla, mix well
  • Place in muffin tin lined with cupcake liners
  • bake

We like to eat these warm, I would definitely recommend warming them up, even if you’re on the way out the door.  Pop them in the microwave for 40 seconds and you’re off!

If you’re eating in, take the cupcake wrapper off and put the single serve cranberry baked oatmeal cup in a bowl. After you warm it up, give it a splash of milk.  Vanilla yogurt is really good on it too.

Ingredients

  • 3 cups rolled oats
  • ½ cup brown sugar
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • ¼ cup melted butter
  • ¼ cup unsweetened applesauce
  • 2 tsp vanilla

Instructions

  • Preheat oven to 350. Combine oats, brown sugar, cinnamon, baking powder and salt in a large bowl.
  • In a separate bowl, combine eggs, milk, butter, applesauce and vanilla
  • Add wet ingredients to the dry ingredients and mix well.
  • Pour into an 8x8 greased baking dish and bake at 350 for 40 minutes until golden brown.

Notes

You can use any dried fruit, frozen fruit or fresh fruit in place of the Craisins.
You can also bake the mixture all together in an 8x8 pan. To do that, increase your baking time by 10-15 minutes
