Lemon Chicken

For those of you who don’t know, we are currently in a small three-bedroom apartment. After moving to Texas, we decided to save money while building our new home here, so thought squeezing in here wouldn’t be a huge deal for six months. I admit, I’m really struggling with this, though! Not only is it cramped, but half of our stuff will stay packed until we move into the house. My kitchen is sad; it’s smaller than the one I had in college! So lately it’s all I can do to bring myself to cook new things, just because the lack-of-space is wearing on me. This tasty Lemon Chicken is one meal I did try new, and it was a hit with my lovely aunt Janie!

Lemon Chicken / Busy Mom's Helper

Ingredients:

  • 6 Chicken breasts
  • 4 tbsp. Lemon juice
  • 4 Garlic pieces
  • 2 tbsp. Olive oil
  • 1 slice Onion
  • 2 cups Broccoli
  • 1 can Cream of Chicken soup
  • 2 tbsp. Coriander seeds
  • 1/2 tbsp. Basil

Directions

  1. Preheat oven to 375 degrees.
  2. Place chicken breasts and broccoli in a sprayed baking pan.
  3. Combine all other ingredients in a bowl. Pour over chicken and broccoli.
  4. Bake for 30-45 minutes, or until cooked through.

So get creative and try something new in your own kitchen – like this lemon chicken!

  • This is the first time I’ve been to your blog and it looks fun, but what I really want to say is that I totally sympathize with your moving into an apartment while building a house. It’s not fun. We did the same thing, but the seller of our property backed out, and then a second seller backed out on another property, so we ended up scrapping our plans for our dream home (after 9 months in a 4th floor, 2 bedroom apartment with 2 kids under 4 and no elevator) and buying an existing home, mostly because we just couldn’t take apartment life anymore. It is totally different being in an apartment with kids. Who knew?

    • Oh my goodness, I would have cried if that happened!! I should stop complaining now 😉

      Yes, apartment life is completely different when you have kids, especially little ones, than if it’s just the two of you. I have friends without kids that are like ‘oh, it’s no big deal, I don’t see why you don’t like it’. I kinda just want to make them come babysit here for a few days so they can understand 🙂
