How many of you forget to eat sometimes? I miss meals quite often, unfortunately, and it’s not because I’m not hungry (anyone who knows me knows that I LOVE food), but I simply forget to feed myself. I use to think I was losing my mind, but after talking with several other parents – especially moms – out there, I realized that my problem was actually quite common. We’re so focused on taking care of the kids and everything, that we tend to put ourselves last. Sometimes this results in running out of time for our own things – like eating. First of all, don’t plan something that requires a bunch of preparation or cooking time if you aren’t REALLY going to get that time. Be realistic, mommas! Easy Chicken Fried Rice with Egg – 2 Servings
- 1 Package of Tai Pei Chicken Fried Rice
- 1-2 Large Eggs
- Cook Tai Pei Chicken Fried Rice per package directions. Set aside.
- Heat skillet with oil and fry one or two eggs until whites are set and yolk is still runny.
- Transfer fried rice on a plate and top with fried eggs. Enjoy!
