The Absolute Best Homemade Chicken Noodle Soup

It’s safe to say that everyone loves chicken noodle soup. It’s tasty, great when you’re down with the flu, and highly nutritious. Homemade chicken noodle soup is full of vitamins and minerals that can jumpstart your whole body and give any disease a run for its money. The same, however, cannot be said about store-bought chicken soup – it’s best to stay away from it.

Even if you are a beginner, the soup is extremely easy to prepare. The only problem is that there are too many recipes and each one claims it’s the ‘ultimate’. Well, worry no more. We have the absolute best chicken noodle soup recipe that ‘hides’ a few secret ingredients that make it all the better.

Chicken Noodle Soup

Ingredients

  • 2 pounds bone-in chicken thighs
  • 1 tablespoon canola oil
  • 10 cups chicken broth
  • 3 cups egg noodles
  • 1 garlic clove (minced)
  • 4 celery ribs
  • 1 onion (chopped)
  • A bit of fresh thyme
  • A bit of fresh parsley
  • 1 tablespoon lemon juice
  • 2 bay leaves
  • Salt and pepper to taste

Preparation

Season the chicken thighs with pepper and salt, then cook it in a pot with canola oil for about 3-4 minutes per side. Save a few tablespoons from the drippings if you want for future soups.

Next, chop the onions if you haven’t already and cook for around 5 minutes. Add the garlic, stir well, then add the broth and bring everything to a boil. This is the base for the soup. Add any other veggies you have (or like to add) and the cooked chicken, then simmer on low heat for 20-30 minutes.

Remove the chicken from the pot after about half an hour, add noodles, and cook for 20 more minutes. Shred the meat and throw the bones away, then add parsley and thyme to it. Put it back in the top, add the bay leaves, check the seasoning and that’s it. Save some of the veggie scraps for a delicious pot of chicken noodle soup next time. Bon appetite!

My Hubby is a Google+ addict. Not over-the-top crazy, but it’s the social media he prefers. I’m often found browsing Pinterest and Facebook, he’s on G+. What’s awesome, though, is when he comes across a good idea for a recipe on there, and we can add it to our menu. That’s what happened with these Spicy Thai Chicken Wraps!

I’m so glad he found the inspiration for this recipe because it was totally delish! He’s a spicy-lover, and I’m not…yet it was just the right amount for both of us. Not sure how it worked out that way, but it was perfect! These Thai Chicken Wraps are a great meal, or just serve the chicken alongside some pasta or veggies.

Ingredients – Sauce

  • 8 tbsp. (1 jar) Red Curry Paste (found in the aisle near soy sauce and such)
  • 8 tbsp. Sugar
  • 4 tsp. Apple Cider Vinegar (regular Cider Vinegar is fine)
  • 4 tbsp. Tomato Soup
  • 4 tbsp. Water
  • 4 tsp. Sesame Oil
  • 4 tsp. Garlic Powder
  • 1-2 tsp. Red Pepper Flakes

Ingredients – Other

  • 6 Chicken Breasts, cut into strips
  • 1 cup Tomatoes, diced
  • 1 cup Mozzarella, shredded
  • Tortillas for Wrap (I used Spinach & Herb Tortillas)
  • Toppings: Tomatoes, Cheese, Lettuce, etc.

Directions

  1. Preheat oven to 350 Degrees F. Spray or line a large baking pan. Place Chicken strips in pan.
  2. In a medium bowl, mix all of the sauce ingredients well. Pour over chicken in pan.
  3. Sprinkle the Mozzarella and Tomato dices over the top of the chicken. Bake for 30-45 minutes, or until cooked through.
  4. Make wrap as desired, and enjoy!

There’s quite a few things that make me think ‘summer’, and one delicious thing on that list is kabobs. Seriously, I LOVE a good kabob! Variety, grilling, and a great fun way to let the kids ‘help’ make their own dinner. Win! I especially love it when I find a delicious marinade for them, and today I’m sharing my absolute favorite: Sundried Tomato Vinaigrette Kabobs!

We don’t have a normal grill. I know, that’s insane, but we don’t. We do have a little countertop electric grill I got Hubby our first Christmas together (and it still works…amazing!), so that’s what we use for now. It’s just not the same, and I’m keeping my fingers crossed that by next summer we can be enjoying a REAL grill for delicious foods like this!

The marinade on these kabobs is super easy (add ingredients and blend….can’t get much easier than that!) and is so delicious! You can even use it for a yummy salad dressing, if you want. These kabobs become so juicy and full of flavor when you add the Sundried Tomato Vinaigrette, you’ll be making them again and again!

Ingredients – Marinade

  • 1-2 cups Sundried Tomatoes
  • 1/4 cup Red Win Vinegar
  • 1 tbsp. Garlic Cloves, minced
  • 1 tbsp. Basil
  • 1/2 cup Olive Oil
  • Salt & Pepper, to taste

Directions – Marinade

  1. Combine all of the ingredients in a blender and mix until it’s well combined.
  2. Ya, it’s that easy!

For Kabobs

  1. Choose your items you want for your kabobs. Some ideas may be: Chicken or beef, peppers (green, yellow, red, orange), mushrooms, pineapple, tomatoes, zucchini, squash, onions, etc. Get creative and mix it up!
  2. Use a basting brush to spread the Sundried Tomato Vinaigrette all over your food on the kabobs (or before putting them on, doesn’t really matter). Grill (or bake at 350 Degrees F) until meat is fully cooked through.
  3. Enjoy this lick-your-fingers-good meal!!!

Chicken Bowls With Homemade Salsa Verde

Do you need a 20 minute weeknight meal that knocks your socks off?  Try these Chicken Bowls with Homemade Salsa Verde!  Green Salsa is easier than you think to make.  You could make this recipe with jarred sauce, but homemade is SO much better!  I don’t think you’ll regret it.  Plus, 20 minutes?  It’s no time at all for a grand dinner!

These are tomatillos.  Have you ever tried them? This is what salsa verde, or, green salsa is made out of.  They come with these little papery husks on them. Once the husks are peeled off the tomatillos feel sticky.  So, next they need to be rinsed well.  I like to use a vegetable cloth on mine just to help get it off good.

Now that we’ve had a lesson in tomatillos, let’s get rolling on this recipe.

This recipe is adapted from Mark Bittman’s Kitchen Express.  This is one of my favorite cookbooks for quick meals–as the title suggests.  🙂  It’s all real food and very simple to put together.  It’s divided into seasons, and I love that too.

If you want to learn how to make anything in your kitchen, Mark also has a book called “How to Cook Everything“. This is my go-to for so many things.  Homemade condiments, ice cream, really, anything you can think of, it’s in there–kinda like prego–it’s in there!

Ingredients:

  • 12 tomatillos, peeled and rinsed
  • juice of 1 lime
  • 1 (4 oz) can chopped green chilis
  • 1 clove of garlic, minced or smashed into a paste
  • salt and pepper to taste
  • rotisserie chicken (either store bought, or make your own), shredded
  • 1 cup sour cream
  • milk
  • 1 avocado, diced
  • cilatro for serving
  • Corn chips for serving

Instructions:

  1. Quarter the tomatillos and put them in a food processor.  Add lime juice, garlic and chiles. Pulse the processor until you have the desired consistency.  I like mine a little bit chunky, but not too much. Pour the sauce into a sauce pan and bring it to a soft boil.
  2. Add the shredded chicken and let it simmer.  Add salt and pepper to taste.
  3. Put the sour cream in a bowl, and add just enough milk until it’s a smooth sauce that’s pourable.
  4. Load up bowls with the chicken mixture.  Top with avocado, cilantro, sour cream sauce and corn chips.

See? Easy as pie, or I should say easier, way easier than pie.  Enjoy your chicken bowls with homemade salsa verde that only took you 20 minutes to make!!  🙂

My husband is a meat and potatoes kind of guy. He was raised in Idaho and that is what he grew up eating. If he had his way, he would eat some sort of beef and some sort of potatoes 6 days a week. What would he eat on the seventh day? Probably pizza. I did not grow up eating that way. My dad was in the U.S. Air Force and we moved all over the place for his job. Since we moved so much, we ate a wide variety of food.  I’m pretty sure that I couldn’t eat red meat and potatoes every day. My challenge when I married my husband, almost 25 years ago, was to introduce him to variety in his diet. Veggies too, because he didn’t eat many of those either. Sometimes you find something that everyone loves. Yay! This Cheesy Baked Chicken is one of those recipes and I’m so glad because it is one of my favorite ways to eat chicken.

When you make this chicken, don’t let it scare you. It’s really easy to make. Promise. I used plain panko bread crumbs that I found in the bulk bins at our local grocery store. The reason I used panko is because they get crispier than regular bread crumbs. If you don’t want it super crispy, you can use regular dry bread crumbs. Also, if you run out of butter while your sealing in the crunch and flavor, feel free to add more. You can never have too much butter.

Cheesy Baked Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 1/2 cups panko bread crumbs
  • 3/4 cup shredded Parmesan cheese
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 Tbsp Italian seasoning
  • 1/4 cup butter

Instructions

  • Preheat oven to 350°.
  • In a cereal size bowl, beat the eggs and milk until well beaten.
  • In a larger size bow, mix bread crumbs, Parmesan cheese, garlic powder, onion powder and Italian seasoning.
  • Trim fat from chicken and cut into strips.
  • Melt butter in a skillet.
  • Dip chicken in egg mixture and then bread crumb mixture.
  • Lightly fry chicken in butter until lightly browned on each side, turning once. About 2 minutes per side.
  • Place chicken on greased or covered baking sheet.
  • When all the chicken is browned, bake for 20 - 30 minutes, until chicken is cooked through.
  • Remove from oven and serve.

Cheesy Baked Chicken

If you like chicken as much as we do, you can make extra. It is great as a leftover and it is also great cold, so take it on a picnic, with some potato or macaroni salad, watermelon and lemonade. Our favorite things to have with this chicken are mashed potatoes and corn. It is one of my family’s favorite meals. When I made this for my grand kids, my grandson asked for thirds. He said it is really great and he is a picky eater. I hope you and your family will love this as much as we do.

Since we’re keeping our food budget low and our time is crunched, it’s lucky we can make our favorite Slow Cooker Chicken Marsala in hardly no time at all, and it still comes out delish!

Many of you probably remember that one of our favorite dishes is marsala chicken – and while we often make it the ‘old fashioned’ way, I’m thrilled that now I can make it even when I’m in a hurry! Great for those days we want a romantic dinner at home, but can’t spend forever in the kitchen.

Ingredients

  • 4 Chicken Breasts, boneless & skinless, thawed
  • 32 oz. Marsala Wine
  • 2 tbsp. Garlic, minced
  • Salt and Pepper – few dashes each
  • 12-24 oz. Portabella Mushrooms, diced
  • 16-24 oz. Heavy Whipping Cream
  • 1 medium Shallot, minced
  • 1/2 cup All-purpose Flour

Directions

  1. In your slow cooker, combine the wine, garlic, and shallots. Add your chicken breasts, sprinkle with salt & pepper, then top with the mushrooms. Cook on low about 4-5 hours.
  2. Remove the chicken breasts, then whisk in the heavy cream (if you like more Marsala flavor, use less of the cream; if you like less Marsala flavor, use more of the cream) and the flour. Replace the chicken and continue cooking on low another hour.
  3. Enjoy your creamy Marsala sauce and flavorful chicken!

  • 1 can Campbell’s® Condensed Cream of Mushroom Soup, family size
  • 3-4 cups Instant Brown Rice
  • 3 cups Broccoli Florets, frozen
  • 1 lb. Boneless, Skinless Chicken Breasts, shredded
  • 3/4 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. Garlic Powder
  • 1 Onion, diced
  • 1 tbsp. Garlic, minced
  • 1/3 cup Plain Greek Yogurt
  • 2 tbsp. Dijon Mustard
  • 1/2 cup Grated Parmesan Cheese
  • 1 cup Cheddar Cheese, shredded – plus some for topping (about 1 cup)
  • Bread Crumbs, for topping
  • 1-2 tbsp. Parsley, for topping

Directions

  1. Preheat oven to 375 Degrees F. Spray a deep 9×13 baking dish, set aside.
  2. In a pot, bring the can of mushroom soup (plus 1 can water) to a boil. Add the rice, return to a boil, then simmer about 5 minutes. Remove from heat and let sit about 5 minutes while you do the rest of the prep.
  3. In a large bowl, mix all of the ingredients (except the toppings: cheese, bread crumbs and parsley). Stir in the rice. Spread into the prepared baking dish.
  4. Top with the remaining ingredients and bake, covered, about 30-45 minutes, or until the broccoli is tender. Enjoy!

  • 1 box Pasta of choice
  • 1-2 Chicken Breasts, boneless and skinless
  • 2-3 cups BBQ Sauce
  • 1 cup Green Onions
  • Shredded Cheese of choice

Directions

  1. Bake chicken, marinated in half the BBQ sauce, at 375 for about an hour (or until chicken is cooked through). Cook pasta according to package directions.
  2. Dice the green onions and chicken breasts – add to pasta. Include the remaining BBQ sauce and mix it all together. Plate and top with shredded cheese.

This Dr Pepper® Hot Dog Sauce is so finger-licking good, and you can find all SORTS of foods to put it on, not just some good ol’ hot dogs! It’s tangy, but not necessarily spicy. Scoop it over your dogs with some of your favorite toppings like pickles, and chow down while rooting for your favorite college team!

Ingredients

  • 1/2 stick Butter
  • 1/4 cup Yellow Onion, chopped
  • 3 tbsp. Garlic, minced
  • 12-ounce can of Dr Pepper®
  • 1 cup Ketchup
  • 1/2 cup Brown Sugar, packed
  • 1/2 cup Vinegar
  • 1/2 cup Worcestershire Sauce
  • 3 tbsp. Tomato Paste

Directions

  1. In a medium saucepan, cook the onion and butter over medium heat until the onions are tender, about 6-8 minutes. Add the garlic and stir until fragrant, about 2 minutes.
  2. Add the remaining ingredients, stirring well. Reduce heat and simmer, covered, about 15 minutes. Uncover and continue simmering until the sauce starts to thicken, about 20-30 minutes.
  3. Remove from heat and cool a bit before enjoying over your game day hot dogs!

Spicy Dr Pepper Chicken Strips / by Busy Mom's Helper

My hubby LOVES spicy food. Me? I do love it – but can’t really handle it anymore since having kids. When I make recipes that have a bit of a ‘kick’ to them, I try to make them flexible, so we can adjust the level of spicy to please not only his taste buds, but my wimpy ones, too! These Spicy Dr Pepper Chicken Strips are just that – perfect for any level of hot you prefer! Plus they’re full of flavor and SUPER easy to make, making this a total win!

You don’t HAVE to do these as chicken strips – the sauce really would be great for wings, full chicken breasts, or even in a crockpot with some chicken for an even easier dish! But really, can you get much easier than just THREE ingredients to make the yummy sauce? I don’t think so 🙂 Plus, it uses Dr Pepper – the most wonderful of all drinks, in my very blunt opinion!

Ingredients – Sauce

  • 24 oz. Dr Pepper
  • 1/2 cup Hot Sauce of choice (I used Franks Red Hot Sauce)
  • 4 tbsp. Brown Sugar

Directions – Sauce

  1. In a medium saucepan, mix this ingredients well over medium-high heat. Bring to a boil, then reduce heat and simmer about 30 minutes while the sauce reduces (about half) and thickens slightly.

When the sauce is done, use it to coat the meat of your choice – wings, strips, or a roasted chicken, if that suits your fancy! To make it super quick for our purpose here, I bought some pre-cooked chicken strips, heated them up in the oven, then just tossed them in a bowl with the sauce until they were fully coated.

These were made as part of a football party where I made EVERYTHING using Dr Pepper – gotta learn to love football somehow, right, so why not with the drinks and food?!

Life’s busy, right? Kids, school, work, house chores, cooking – okay, I better stop before I start to cry! Anywho – we need all the help we can get, such as some genius snack hacks. Well right now Farm Rich is having a Back Your Snack contest – so it’s the perfect time to create your own snack hack recipes, plus vote on others! One of my newest favorites that my family has enjoyed are these BBQ Chicken Bombs – delish, quick and only 4 ingredients. That’s what I call a winner!

We often use tasty snacks like Farm Rich products to make the after-school rush a little easier, plus it’s so easy to get a variety! For the Chicken Bombs, I just grabbed their Boneless BBQ Chicken Bites in the frozen section at Walmart, a few other items, then whipped it up really quick before the kids got home. It was a hit!

Ingredients

  • Farm Rich Boneless BBQ Chicken Bites
  • 1 8-oz package Cream Cheese, softened
  • Green Onions (fresh produce section), diced
  • 1-2 packages refrigerated biscuits or crescents rolls

Directions

  1. Preheat the oven according to Chicken Bites instructions and bake as directed – without using the BBQ sauce packet.
  2. In the meantime, spray or line a baking sheet and spread out the biscuits or crescent rolls. Spread some of the BBQ sauce from the packet on each biscuit.
  3. Mix the cream cheese and green onions well. Place a small scoop on each biscuit. When the chicken bites are ready, place one inside each biscuit and wrap up, pinching the edges closed. Back Your Snack / BBQ Chicken Bombs / by Busy Mom's Helper #BackYourSnack #ad
  4. Bake according to biscuit package directions. Allow to cool a bit and ENJOY!
