There’s quite a few things that make me think ‘summer’, and one delicious thing on that list is kabobs. Seriously, I LOVE a good kabob! Variety, grilling, and a great fun way to let the kids ‘help’ make their own dinner. Win! I especially love it when I find a delicious marinade for them, and today I’m sharing my absolute favorite: Sundried Tomato Vinaigrette Kabobs!

We don’t have a normal grill. I know, that’s insane, but we don’t. We do have a little countertop electric grill I got Hubby our first Christmas together (and it still works…amazing!), so that’s what we use for now. It’s just not the same, and I’m keeping my fingers crossed that by next summer we can be enjoying a REAL grill for delicious foods like this!

The marinade on these kabobs is super easy (add ingredients and blend….can’t get much easier than that!) and is so delicious! You can even use it for a yummy salad dressing, if you want. These kabobs become so juicy and full of flavor when you add the Sundried Tomato Vinaigrette, you’ll be making them again and again!

Ingredients – Marinade

  • 1-2 cups Sundried Tomatoes
  • 1/4 cup Red Win Vinegar
  • 1 tbsp. Garlic Cloves, minced
  • 1 tbsp. Basil
  • 1/2 cup Olive Oil
  • Salt & Pepper, to taste

Directions – Marinade

  1. Combine all of the ingredients in a blender and mix until it’s well combined.
  2. Ya, it’s that easy!

For Kabobs

  1. Choose your items you want for your kabobs. Some ideas may be: Chicken or beef, peppers (green, yellow, red, orange), mushrooms, pineapple, tomatoes, zucchini, squash, onions, etc. Get creative and mix it up!
  2. Use a basting brush to spread the Sundried Tomato Vinaigrette all over your food on the kabobs (or before putting them on, doesn’t really matter). Grill (or bake at 350 Degrees F) until meat is fully cooked through.
  3. Enjoy this lick-your-fingers-good meal!!!

Tomatillo Dressing

Hey it’s Nikki with Busy Mom’s Helper, who here likes sweet pork?  It is one of my favorites! I love going to Costa Vida and getting their sweet pork burrito, but it can get expensive so I found a good copy-cat recipe. To spice it up more I added this Tomatillo Dressing that makes it more moist and adds a lot of flavor.

Ingredients

  • 3 tomatillos
  • 1 bunch cilantro
  • 1 tsp garlic salt
  • 1 lime
  • 1 packet hidden valley ranch dressing
  • 1 cup buttermilk

Directions

1. Cut into smaller pieces the tomatillos and cilantro and place in blender.  Remove the skin from the tomatillos, most of the time the skin will fall off on its own or its really simple to peel off.

2. Add in the garlic, ranch, and buttermilk.  If you don’t have buttermilk just add 1 cup milk and 2 tablespoons butter.

3. Cut the lime in half and squeeze juice into the blender.

4. Blend well, I usually blend only half the cilantro with everything for about a minute then add the rest, scrape down the sides, and blend for another minute or two.

Serve cold over any dish! I especially love it with my sweet pork burrito, but it is also great on salads as well – I have even put it on rice.

Sweet pork

Ingredients

  • 2 pounds pork
  • 2 cans pepsi (not diet)
  • 1 cup brown sugar
  • 1/2 tsp garlic salt
  • 1/4 cup water
  • 1 can diced green chilies
  • 1 can enchilada sauce (mild, medium, or hot)
  • 1 cup brown sugar

Directions

  1. Marinate pork in a bag over night with 1 can of pepsi 1 cup brown sugar and garlic salt and water.
  2. Place the content of the bag into a slow cooker and cook on low for 7 hours or high for 3-4.
  3. An hour before you want to eat, drain the pork, shred it with two forks, then place back into the empty crockpot
  4. Combine the shredded pork with the diced chilies, enchilada sauce, 1 cup brown sugar, and 1 can Pepsi. Stir well.
  5. Turn the crock pot on high and let warm for about an hour.

Serve burrito style with rice, sour cream, cheese, and the flavorful Tomatillo Dressing, or over a salad.

Simple Strawberry Vinaigrette

Who else has that one fruit that they absolutely LOVE? Like when you go to the store and see it on sale, you do a little happy dance (and get the weirdest stares)? For me, that’s strawberries. They’re A-MA-ZING! So, naturally, I love making all sorts of recipes using these sweet-and-tangy berries, like this Simple Strawberry Vinaigrette!

I’ve always been picky with salads, and can only enjoy ones that are fresh, and topped with flavorful dressing. This Simple Strawberry Vinaigrette does NOT disappoint! It’s chuck full of strawberry goodness, with a hint of balsamic vinegar. Mix it with some crisp greens, maybe a handful of almonds, and you’ve got a totally satisfying salad on your hands!

Makes about 1 cup dressing

Ingredients

  • 1/2 cup Olive Oil
  • 1/4 lb. Strawberries
  • 1 tbsp. Balsamic Vinegar
  • 1/4 tsp. Salt
  • 1/8 tsp. Black Pepper
  • 1/8 tsp. Dried Tarragon
  • 1/8 tsp. Sugar

Directions

  1. Slice the green tops off the strawberries, and wash well.
  2. Combine all ingredients in a blender, blend until smooth.
  3. ENJOY! Be sure to store leftovers in the fridge.

Note: I’ve done some where I included almonds in the vinaigrette, just blending it with everything – also delish!

Don’t make too much at once, because it doesn’t store for very long. Besides, the flavor is best fresh! I try to just make it as I go…but you could do it a day or so ahead and be fine. I haven’t tried freezing it, yet, but that could work. If you give it a try, please let us know how it worked out!

I love pomegranates, like a LOT! I absolutely dread having to dig the fruit out of it’s shell, though. Not only that, but the seeds inside Every. Single. Kernal makes it nearly impossible to use it in recipes. Unless you want a crunchy smoothie or something. Not my preference, so I don’t.

If you missed my post earlier today, I shared a delish recipe with my first two choices of LorAnn’s Oils & Flavors: Marshmallow, and Princess Cookie & Cake.  I’m so glad that I selected LorAnn’s Pomegranate Flavoring for my third option so I could finally enjoy a Pomegranate Vinaigrette on my salads!

I’ve really enjoyed making other fruit vinaigrette dressing before, but it’s usually Strawberry or Raspberry. Something with minuscule seeds you can easily blend up. I do enjoy how creamy they are. This Pomegranate Vinaigrette isn’t a thick type of creamy, but the flavor is so smooth and delicious! It can be mixed with a variety of your favorite salad toppings, too, so the versatility of it is a major bonus.

Ingredients

  • 3/4 cup Olive Oil
  • 1/4 cup Balsamic Vinegar
  • 3-4 tsp. Brown Sugar
  • Dash Salt
  • 1/4 – 1 tsp. Pomegranate Flavoring from LorAnn (more or less to desired taste)

Directions

  1. Whisk all ingredients together well. Enjoy over salads with desired toppings!

So I must confess, originally I was trying to do a copy-cat Olive Garden dressing because I was really craving Olive Garden. It’s one of my (many) favorite restaurants, yet we’re trying very hard to not eat out so we have more to spend on our home that’s being built. It would be much easier if I had a decent sized kitchen so I can actually COOK whatever we wanted. Oh well, it’ll be worth it, right? Right! Anywho….so I was trying to do that recipe, when I realized some of the things I definitely needed, I didn’t have on hand. After deciding I was much too lazy to get out of my pj pants (at about 5pm, by the way) to run to the store, I decided to see what I did have on hand that would make a delicious salad dressing. When I pulled out the balsamic vinegar, I had a ‘lightbulb’ moment and immediately set to making a Tangy Balsamic Salad Dressing. It turned out great, and helped me avoid my urge to eat out – bonus!!!

Tangy Balsamic Salad Dressing

Ingredients
1/2 cup Mayo or Miracle Whip
1 tsp. Vegetable Oil
2 tbsp. Corn Syrup
3 tbsp. Parmesan Cheese, shredded
3 tbsp. Romano Cheese, shredded
1/4 tsp Garlic Salt
1/2 tsp. Italian Seasoning
1/2 tsp Parsley, flakes
2 tbsp. Lemon Juice
1/3 cup Balsamic Vinegar

Directions
Add all ingredients to a blender, blend until smooth and creamy.

Toss in a salad with fresh greens, tomatoes, croutons and other toppings as desired. Sprinkle a little Parmesan or Romano cheese on top.

Enjoy!!!
