The Best Dairy-Free Coconut Ice Cream You’ll Ever Try

You love ice-cream, we love ice-cream, everyone loves ice-cream. That’s a fact. The most popular dessert comes in many shapes and sizes including standard ones like chocolate and some rare variants such as coconut ice-cream. Doesn’t sound too appealing? Wait until you try our recipe.

Dairy-free desserts aren’t something many people are willing to try, but that’s just because they haven’t found the right recipe. These things are great if you know how to prepare them. Such a coconut ice-cream is a perfect dessert thanks to the rich saturated fat content. It’s great for vegans as well, so why not try it?

The Best Dairy-Free Coconut Ice Cream You’ll Ever Try

Dairy-Free Coconut Ice-Cream

Ingredients

  • 3 cans coconut milk
  • ¾ cup coconut sugar (maple syrup and honey are good alternatives)
  • 1 teaspoon unflavored gelatin

Preparation

Mix a can of coconut milk and sugar in a large saucepan, then cook the mix on medium heat for 10 minutes while stirring. It should reduce by half. Let the mix cool down completely. In the meantime, scoop the coconut out of the remaining cans of coconut milk and put it in a bowl. Use a mixer to whip it for several minutes – you’ll want a fluffy and light texture. Let the whipped coconut milk in the fridge for 10-15 minutes.

In another bowl, mix the gelatin with 2 tablespoons of the condensed coconut milk. Let the gelatin melt on steam after, then mix this with the condensed milk from before and the whipped cream from the fridge.

Transfer the mixture into an ice-cream container and leave it in the freeze for 6 hours. You can add some vanilla, matcha powder or coconut extract to sweeten things up. Bon appetite!

All this heat has me ready for summer to end!  Well, kind of, I love summer so let’s cool off with Summer Science Cold! where we will make a couple of cold treats to enjoy and hopefully cool us off.

I love summer but after several months of really hot weather it starts to not be as enjoyable.  Enjoying some cooling treats helps a lot though.  With this week’s summer science we are going to make homemade ice cream and homemade butter.  Who doesn’t love ice cream and watching it form right before your eyes your kids will be amazed and then enjoy eating ice cream they actually made.  Butter is a little bit of a stretch, yes it is cold but I served it over nice warm homemade bread but it still was fantastic to make and homemade butter seems to always taste better.

Homemade ice cream!  This is where Summer Science Cold actually gets really cold. Ice cream is one of my favorite treats and with homemade ice cream I like how it is not super hard but it also is easier to get a brain freeze!  With ice cream explain to your kids how freezing works.  By filling the bag with ice and also salt the salt helps make the ice even colder causing the milk to freeze.

Supplies:

  • Gallon size freezer bag
  • About 6 tablespoons Salt (I use rock salt which is available at grocery stores)
  • Ice enough to fill a gallon bag
  • Sandwich bag
  • ½ cup Milk
  • ½ teaspoon Vanilla
  • 1 ½ tablespoon sugar
  • 1 tablespoon Chocolate syrup, or cocoa powder for chocolate ice cream. (optional)
  • Toppings!

Directions:

  1. In the sandwich bag mix together milk, vanilla, and sugar. (chocolate syrup or cocoa if desired).
  2. Seal the sandwich bag really well (we placed the sandwich bag into another sandwich bag just in case it broke) and place into the gallon bag.
  3. Fill the gallon bag with ice and pour salt over.  Seal.
  4. Shake!  You might want gloves or a towel because it does get really cold!
  5. Shake until the milk mixture is solid or at least ice cream like, scoop out of the bag and enjoy!

Homemade Butter will show your kiddos how cream goes through different stages to become butter and how to make it themselves.  This experiment only involves a few simple ingredients, some muscle power, and you’ll have amazing tasting butter to enjoy! With this experiment I also made my homemade braided bread to go with the butter.  Bread is also a great experiment to show how yeast rises and expands bread.

Supplies:

  • 1 pint Heavy whipping cream (room temperature)
  • Mason jar
  • 2 marbles (optional)
  • Medium sized bowl
  • Salt (optional)

Directions:

  1. Fill a mason jar only about half way with the heavy whipping cream making sure there’s enough room for it to slosh around.  Having the cream at room temperature helps it become butter a little faster.
  2. Place 2 marbles in the jar, if you are worried about breaking the jars then you can leave them out, I didn’t have any problems and we shook them really hard.
  3. Screw the lid on tight!
  4. Shake!
  5. After a couple minutes it’ll stop sloshing and seem more solid, if you open the jar you will find whipped cream!
  6. Seal the lid again and Shake!
  7. It’ll get harder and little ones might need some help shaking it. The whipped cream will start the change into what looks like curdled milk.
  8. Shake until you see the buttermilk beginning the separate out and there’s a solid mass of butter.
  9. Remove from jar and place in a bowl.  Remove marbles.
  10. Pour a cup of cold water into the bowl and knead out the butter milk rinsing every now and then until water becomes clear.  Once rinsed add a little salt if you want and enjoy!

Who knew shaking butter could be so fun!  They were having contests of who could shake the longest!

I received free samples of Maui Natural Cane Sugars to assist with this recipe. All opinions are mine alone.

Remember my love of chocolate, and brownies? Well it struck again, but this time assisted with an easy recipe and a couple additions that made these Frozen S’mores Brownies completely drool-worthy! They not only taste great, but look fabulous so they’re perfect for get-togethers, holiday celebrations – or just because some days you really need a kick-butt dessert.

You can mix these up however you want – use pumpkin ice cream instead to create a whole new flavor (it IS the season!) or top it with strawberry puree. The possibilities are near limitless! To start, whip up these chocolaty, soft and gooey brownies:

Ingredients

  • 1/2 cup Butter
  • 1 cup plus 1 cup Chocolate chips
  • 3/4 cup Maui Whites Crystallized Natural Cane Sugar
  • 1/4 cup Maui Raws Turbinado Natural Cane Sugar
  • 3 Large Eggs
  • 1 tsp. Vanilla Extract
  • 2 tbsp. Cocoa Powder
  • 1/2 cup plus 2 tbsp. All-purpose Flour
  • 1/4 tsp. Salt

Note: for the rest of the Frozen S’mores Brownies you’ll also need a box of ice cream (I used vanilla here, but it’s your choice) and some graham cracker crumbs.

Directions

  1. Preheat oven to 350 Degrees F. Line a 9×9 square baking dish with aluminum foil, then spray to ensure the brownies won’t stick. Set aside.
  2. In a microwave safe bowl, melt the butter and 1 cup chocolate chips in 30 second intervals, stirring between each until it’s mostly  melted and creamy. Scrape into a large mixing bowl.
  3. Mix in both Maui Sugars, the eggs and vanilla until smooth. Gently add in the cocoa powder, flour and salt. Once it’s well-combined, fold in the last 1 cup of chocolate chips.
  4. Pour into your prepared pan. Bake for about 35 minutes, then allow to cool completely. I let it sit about 30 minutes, then placed it in the fridge to cool faster.

Once they’re cooled, use the foil to lift the brownies out of the pan and place on a cutting surface. Pick a cookie cutter of your choice – I felt like a star today – and cut out as many brownies in that shape as you can, placing on a plate and sticking them in the freezer to get a little extra cold.

Open your box of ice cream and slice into a few rows, about 1/2-1″ thick. Then use the same cookie cutter to get the matching shape and place on your pretty-cold brownies. Place back in the freezer quickly!

Put any remaining ice cream in an airtight container – I kept an old gallon container from previous ice cream, washed it out, then stored this extra in there.

When the ice cream is back to frozen, sprinkle the tops with some graham cracker crumbs. Store in an airtight container in the freezer until ready to serve. Enjoy!

  • Müller® Ice Cream Inspired Yogurt – Vanilla Bean Flavor
  • 1/2 – 1 cup Raspberries, just slightly frozen
  • 1/4 cup Chocolate Chips

Directions

  1. You can layer it for appeal, such as a thin layer of the Vanilla Bean Yogurt, half the raspberries, then the rest of the yogurt, remaining berries and sprinkle on the chocolate chips.
  2. Or just mix them all together, if that’s more your style!

Baking is especially fun this time of year, don’t you think? But at the same time, I don’t want to spend forever in the kitchen when I could be visiting with those I care about! This holiday recipe is super easy, and tastes A-MAZ-ING! I kid you not, it’s fabulous! What makes it the most fun are the NESTLÉ® TOLL HOUSE® Limited Edition Holiday Morsels. Red, green and the classic Semi-Sweet morsels all wrapped up in a festive seasonal package. They leave hints of red and green swirls inside the chocolate layers, making festive for Christmas guests! Ingredients

  • 3 cups NESTLÉ® TOLL HOUSE® Limited Edition Holiday Morsels (2 bags)
  • 3/4 cup Peanut Butter, divided
  • 1/4 cup Butter
  • 1 cup Sugar
  • 1/4 cup Evaporated Milk
  • 7 oz. Marshmallow Fluff
  • 1 tsp. Vanilla Extract
  • 14 oz. Caramels
  • 1/4 cup Heavy Whipping Cream

Directions

  1.  Line a 9×13 baking pan with foil, then spray the foil with cooking spray. Set aside. Put 1 1/2 cups Nestle Holiday Morsels and 1/4 cup Peanut Butter in a microwave-safe bowl. On 50% power, heat in 30 second increments, stirring between, until it’s melted and smooth.   2. In a medium saucepan, melt 1/4 cup butter. Add the sugar and evaporated milk and stir until dissolved, then boil 5 more minutes stirring frequently. Mix in the marshmallow fluff, 1/4 cup peanut butter and vanilla until smooth. Spread into the baking dish over the chocolate layer and stick in the fridge for 30 minutes, then move on to the next step.
  3. In a small saucepan, melt the caramels and heavy whipping cream over low heat until smooth (about 10 minutes for me). Spread in the baking pan over the other layers, then stick in the fridge for 30 minutes, them move on to the next step.
  4. In a microwave-safe bowl, put the remaining 1 1/2 cups Nestle Holiday Morsels and 1/4 cup peanut butter. Heat on 50% power in 30 second increments, stirring between, until melted and smooth. Spread over the other layers in the baking pan and put in the fridge for 2 hours. When done, cut and serve as desired!

Ingredients – Apple Berry Pie Ice Cream

  • Mrs. Smith’s Apple Pie (or Dutch Apple Pie)
  • Mrs. Smith’s Very Berry Pie
  • 2 cups Heavy Cream
  • Kraft Cool Whip, for topping

Directions – Apple Berry Pie Ice Cream

  1. Bake the pies according to package directions and allow to cool.
  2. In a blender, pour all of the heavy cream. Slowly add scoops of both pies, blending in between. Don’t add too much at a time or it may be too much for your blender. Just add until it’s creamy….about 2-3 cups total between both pies. I like mine with more apple than berry, but that’s just a preference.
  3. Put into an airtight & freezer-safe container and freeze overnight. When ready to serve, allow it to thaw a little, then scoop into dishes, add a little Cool Whip on top, and ENJOY!

  • Graham Cracker Brownies – recipe here
  • Kraft Cool Whip

Directions – Sweet Potato Pie Parfait

  1. Bake your pie according to the package directions and allow to cool for 2 hours as it says.
  2. In a fun glass or bowl, scoop a layer of the graham brownies, a thin layer of cool whip, then a nice layer of warm Sweet Potato Pie. Top it off with more creamy cool whip and ENJOY!

How did y’all like Halloween? As crazy as October was, I’m amazed that it’s already over! Welcome to November….the start of the two craziest months of the year, it seems! I think today we should all recover from the week’s craziness first, though, and enjoy a special treat! My kiddos are stocked up on candy, munching happily through their stash. Hubby and I do love a good candy bar treat (and may nab some here and there without the kids knowing), but often we’d rather something a bit better, such as this Pumpkin Spice Milkshake!

Even though it’s cooling down a ton during the nights here, the afternoons are still way hot and bright. This refreshing, creamy pumpkin spice milkshake has the perfect blend of flavors, making it smooth-yet-flavorful. I love it, although I’m not sure who loved it more…me or Hubby. Guess we can just use two straws and share, right?! Nah, I’ll just whip up two of this quick recipe!

Ingredients

  • 1 cup Milk
  • 1/2 tsp. Ground Ginger
  • 1 tsp Cinnamon
  • 1 tsp. Pumpkin Pie Spice
  • 1/4 cup Sugar
  • 2 tsp. Vanilla Extract
  • 1-2 cups Pumpkin
  • 2-4 cups Vanilla Ice Cream
  • Whipped Cream for topping, if desired

Directions

  1. In a blender, mix everything except the ice cream and whipped topping. Once mixed, add the ice cream and blend until you reach your desired consistency. More ice cream = thicker milkshake.
  2. Pour into a tall glass and top with whipped cream and a sprinkle of pumpkin pie spice. Enjoy!

If you want, you can add a bit of chai tea into the blender to make this a Pumpkin CHAI Milkshake. Mmmm…that sounds really good, too! Maybe I’ll have to make a few more variations this weekend 😀

Doesn’t that look absolutely delightful? I have to apologize for the photo…my nice camera is still at home, so this was actually done with my phone (quickly before the pie was melted and GONE). Want to know the best part of this pie (other than it’s deliciousness?)…….it only takes 5 INGREDIENTS!!!

Cookies and Cream Pie

Ingredients
20 Oreo Cookies, crushed
1 quart Vanilla Ice Cream
1-2 cups Heavy Cream (to your taste, I used 1 1/2)
Jar of Hot Fudge Topping
Spray Whipped Topping
Directions

Mold 3/4 of the crushed Oreos into a deep pie tin to create the crust.In a bowl, mix the Vanilla Ice Cream and Heavy Cream until smooth.

Pour half the cream mixture into the pie crust, sprinkle remaining crumbs, then top with rest of cream mixture.

Heat the Hot Fudge Topping until it’s melted enough to pour over the entire pie. Spread over evenly.

Place in freezer until firm, or ready to serve. Top with Whipped Topping as desired.

Seriously, the heavy cream with the ice cream just makes it so smooth and creamy, it’s delightful!!!

I’m going to share with you one of our go-to summer dessert recipes: Creamy Orange Dream Pie! I think my dad would say it’s his favorite dessert I’ve made – he had seconds! And thirds, and I think fourths….but you get the idea 🙂

I’m not sure about you, but we’re DEFINITELY feeling the summer heat here in Texas so far. Still not the scorching temperatures we’ll be hitting in the later months, but hot and muggy just the same. Other than hitting the pool (and wearing out the kids…bonus!), cooling off with a delicious cold treat it just what the doctor ordered!

This Creamy Orange Dream Pie is full of creamy, refreshing flavor. Another great thing? It’s SUPER easy to make! Whip a few things together, refrigerate a bit, and then you’re enjoying the perfect dessert!

Ingredients

  • 80 Wafer cookies (like Nilla wafers), finely crushed
  • ½ stick Butter, melted
  • 2 cups Milk
  • 2 pkg. (small) Vanilla instant pudding mix
  • 8 oz. Whipped cream, thawed
  • 2 cups Orange sherbet, softened

Directions

  1. In a 13×9 pan, line foil with the ends extending over the sides of the pan.
  2. Mix wafer crumbs and butter. Press firmly onto bottom of pan.
  3. In medium bowl, mix pudding mixes and milk until well blended. Stir in half of the whipped cream. Spoon evenly over the crust. Place in refrigerator for 10 minutes.
  4. Mix sherbet and remaining whipped cream until well blended. Spoon over pudding layer after done in the fridge.
  5. Cover and freeze for at least 3 hours. Use the foil ends to remove the dessert from the pan before cutting to serve.

I bet this recipe could be altered for pretty much any flavor; it just depends on the ice cream. I’m eager to try it with chocolate or mixed berry. What would you try, and if you do try something, let us know how it turns out!
