Preheat the oil to 375 degrees.
Place between 1½ -2" of vegetable oil in a deep frying pan and heat over medium high heat. (if using a deep fryer, follow the instructions)
In a medium bowl, mix Flour, Cajun seasoning, Oregano, Basil, Cayenne Pepper, and Salt.
You will have to fry the pickles in two batches. the pickle need space and not be overlapping.
Coat the pickles with flour mixture and shake off any excess. Add the pickles one at a time to the hot oil.
Fry for about 2-3 minutes or until golden brown. Remove pickles with a slotted spoon and drain on paper towel. Repeat until all the pickles have been cooked.
Sever hot with dipping sauce and enjoy!
