In your mixing bowl or KitchenAid Bowl combine the water, sugar, and yeast from step one and let sit for 5 mins for the yeast to bloom.
Once you yeast has bloomed add in the remaining ingredients from step two and knead until smooth and soft. If you are using you KitchenAid mixer, use the dough hook and mix on low for 5-10 mins.
Cover the dough with plastic wrap or a towel and let rise for an hour.
When the dough has doubled in size divide into 12 pieces and shape into loaves.
If you would like lines in the top of your bread (like a French Loaf) add them at this time while a knife.
Place loaves on sheet pan lined with parchment paper or a silicon mat and let rise for 45 minutes.
While the dough is rising, preheat oven to 400 degrees.
Bake for 18 mins until golden brown.
