Ingredients

  • 4 Large Potatoes (Peeled)
  • ¼ cup Butter
  • 1 Onion (Chopped)
  • 1 Bulb of Garlic
  • 2 Tbsp Avocado Oil Or Olive Oil
  • ¼ cup Cheddar Cheese (Graded)
  • ¼ cup Whole Milk
  • ¼ cup Sour Cream
  • ¼ tsp Pepper
  • ½ tsp Salt

Instructions

Step One

  • Preheat oven to 425 degrees
  • Remove one layer of skin from the bulb of garlic and cut the top off so the cloves are exposed.
  • Put the bulb of garlic on tin foil and drizzle with olive oil and wrap up tight. Place in the oven and bake for 30 min until the garlic gets soft. Let cool and squeeze out the roasted garlic from the bulb. Set aside.

Step Two

  • Chop onion and add to skillet with the avocado oil and heat on low for 15-20 mins until they are golden brown.
  • Remove from heat and add to the food processor and combine until smooth.

Step Three

  • Peel and chop the potatoes into about 1 inch cubes.
  • Add the potatoes to a large pot and add water until the potatoes are covered by about an inch.
  • Bring the pot to a boil, reduces heat too low. Let the potatoes cook uncovered for about 15-20 mins or until the potatoes are soft.
  • Drain the potatoes and add the butter, milk, sour cream, onion mixture, roasted garlic, salt, and pepper.
  • Using the potato masher, mashed until smooth.
  • Serve and enjoy!
