Add flour, baking soda and salt to a small mixing bowl and set aside
In a separate mixing bowl mix egg, sugar and oil and stir until well combined
Add the dry ingredients to the wet and stir well. The mixture will be thick and dry, don't worry it's supposed to be that way!
Next add milk, vanilla and bananas and stir until incorporated
Mix in walnuts and pour into a greased loaf pan
Cook 55-75 minutes, checking regularly until a knife comes out clean
Notes
If your bananas are large, cut the bananas used down to three. This will ensure that your bread is not dense and gummy in the middle. Would you prefer to have muffins instead? This recipe is great for that, just cut the cooking time down to 20 mins!
