Lemon OOPS Cake

Have you ever started making something then part-way through you realize ‘OOPS’, you made a terrible mistake with either the ingredients and/or amounts? I’ve totally done that before – but 2 years ago it was a WONDERFUL result of my mistake ending with this moist and flavorful Lemon OOPS Cake!

I was craving something yummy and lemony, so decided to make some lemon bars. You know, smooth and creamy, almost like pudding? So I’m starting to make it, and instead of adding the 6 tbsp. of flour I was suppose to add to the filling…..I added 4 CUPS. As soon as that last scoop went in I just stood there like Oh. My. Heck! Now, my first thought was just double the recipe….but I didn’t have enough of the OTHER ingredients to double it. NOW WHAT?!
Being the ‘Oops, my bad, now moving on’ type of girl, I just decided to go with it and continue the recipe with the extra flour, just to see what would come of it. So what DID come of it? A moist-yet-flaky, oh-so-lemony CAKE. LOVED IT! So now if I get a lemony craving I have to decide: Bar or Cake?

Ingredients – Crust

  • 1 cup Flour
  • 1/4 cup Powdered Sugar
  • 6 tbsp. Butter, softened
  • 3 tbsp. Cream Cheese, softened

Ingredients – Filling

  • 2 tbsp. Lemon Zest
  • 1 cup Lemon Juice
  • 2 cups Sugar
  • 4 cups Flour (saw that one coming, didn’t ya?)
  • 1 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 4 Eggs
  • 4 tbsp. Powdered Sugar – for sprinkling

Directions

Preheat oven to 350 Degrees. Spray a 9×9 round baking pan, or line with aluminum foil. Set aside.
Crust: In a large bowl beat the Flour, Powdered Sugar, Butter and Cream Cheese on low speed until well-mixed. Increase speed to medium and mix until dough forms, occasionally using a rubber spatula to scrape the sides. Press the mixture onto the bottom of the baking pan. Bake for about 30 minutes, or until lightly browned.
Prepare the filling while the crust bakes: In a small bowl, whisk the Sugar, Flour, Baking Powder, Salt, Eggs, Lemon Zest and Lemon Juice until smooth. The mixture will be thick!
Scoop the batter over the still-warm crust. Bake about 30-45 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and place on a wire rack. Sprinkle the Powdered Sugar over the cake. Allow to cool, and ENJOY!
