Lemon & White Wine Veggies

I know a lot of people who are trying to eat healthier, this being the start of a New Year and all. Honestly, I just struggle with this All. Year. Long! It’s not that I don’t like healthy food…I’d eat fruit and veggies all day long if they’re prepared right. The problem is taking the time to actually prepare them, to give them a bit of flavor. So when I find a way to make a delicious veggie dish, like these Lemon & White Wine Veggies, that are just bursting with flavor, it’s like BOO-YAH!
Ingredients
2-3 Large Yellow Squash
1 lb. Green Beans, ends cut off
1 tbsp. Thyme
1/2 stick Butter
1 1/2 cups Lemon Juice
3/4 cup White Wine
Directions
In a large sauce pan, melt the Butter. Add the green beans and cook on medium heat until beginning to soften. While they’re cooking, cut the squash into half, then slices. Then add it to the green beans.
In a bowl, combine the Thyme, Lemon Juice and White Wine. Pour over the veggies, stirring to coat evenly.
Cook until the veggies have reached your desired tenderness, stirring occasionally so all the veggies get the flavor.
Serve! You can also top with Parmesan cheese, if you’d like.
Seriously, these are DELISH!!! Great way to eat more veggies, whether it’s as a side or even a healthy lunch!
